Rajgira Sweet Puri is a delicious, festive and filling dish that can be enjoyed during fasting. Made with rajgira flour, banana, jaggery and cardamom, these puris have a naturally sweet taste and a soft, mildly crisp texture. They are especially suitable for Shravan Somvar, Navratri, Janmashtami and other vrat days, provided these ingredients fit your fasting tradition.

Ingredients

1 cup rajgira (amaranth) flour

1 ripe banana, mashed

¼ cup grated jaggery

½ tsp cardamom powder

1 tbsp grated coconut

1 tbsp ghee

A pinch of rock salt (sendha namak), optional

Water, as required

Ghee or vrat-permitted oil, for frying

Method

Add rajgira flour to a large mixing bowl.

Add mashed banana, grated jaggery, cardamom powder, coconut and ghee.

Mix the ingredients thoroughly until they come together.

Add water little by little and knead into a soft, manageable dough.

Divide the dough into small equal portions.

Place one portion between two sheets of parchment paper and gently roll it into a small, slightly thick puri.

Heat ghee or vrat-permitted oil in a deep pan over medium heat.

Carefully place the puri into the hot oil.

Fry until it becomes golden and slightly puffed, then turn and cook the other side.

Remove the puri and place it on a paper towel to remove excess oil.

Repeat with the remaining dough.

Serve the Rajgira Sweet Puris warm.

Tips for Fasting

Use sendha namak instead of regular salt if salt is allowed in your vrat.

Make sure the oil or ghee you use is acceptable according to your fasting tradition.

Since rajgira flour is gluten-free, the dough can be delicate. Rolling between parchment sheets makes shaping easier.

Ripe banana adds sweetness and also helps bind the dough.

You can replace banana with mashed boiled sweet potato if preferred.

For a richer festive flavour, fry the puris in ghee.

Serving Suggestions

Rajgira Sweet Puri can be served with sweetened curd, plain yogurt, coconut chutney, vrat-friendly potato curry or fresh fruits. It can also be enjoyed on its own as a sweet fasting snack.
