During the summer season, people often seek out foods or sweets that are not only delicious but also healthy. One such sweet is 'Lauki Kalakand' (Bottle Gourd Kalakand), which is not only rich in sweetness but also highly nutritious.

Typically, bottle gourd is used to prepare savory vegetable dishes; however, the Kalakand made from it serves as a unique and special treat for dessert enthusiasts. This sweet is low in calories and, at the same time, packed with numerous nutrients. This is precisely why even health-conscious individuals enjoy it.

Bottle gourd has a significantly high water content, which helps keep the body hydrated. It contains fiber, potassium, calcium, and several essential vitamins. For this reason, it is considered beneficial for improving the digestive system, providing a cooling effect to the stomach, and boosting the body's energy levels. It is an abundant source of fiber, Vitamin A, potassium, calcium, and antioxidants.

Consequently, Lauki Kalakand proves beneficial for the digestive system. Thanks to its fiber content, it offers relief from issues such as constipation, gas, and acidity. Being low in calories, it also aids in weight management. Potassium helps regulate blood pressure and promotes heart health. Additionally, it contributes to giving the skin a natural glow and assists the body in eliminating toxins. During the summer months, it proves highly effective in maintaining energy levels.

Preparing Lauki Kalakand is quite simple. To begin, thoroughly wash and peel a fresh bottle gourd, remove the seeds, and grate it. Heat two tablespoons of ghee in a pan (or *kadhai*), add the grated bottle gourd, and sauté it over medium heat for approximately 10 to 15 minutes. Next, add sugar according to your taste and continue cooking until all the moisture has evaporated.

Subsequently, add *mawa* (reduced milk solids) or milk powder, along with a little more ghee, to the bottle gourd mixture. Continue to sauté while stirring constantly until the entire mixture thickens and acquires a granular texture. Finally, add cardamom powder and mix thoroughly. Spread the mixture onto a plate or tray and let it cool. Once cooled, cut it into pieces of your desired shape. Garnish with chopped almonds, coconut, or pistachios, and serve.
