Chiroti is a popular traditional Indian sweet known for its delicate layers, crispy texture, and delicious sweetness. It is especially enjoyed during festivals, weddings, celebrations, and family gatherings. Made with flour, ghee, and sugar, Chiroti has a beautiful flaky texture that makes it irresistible.

Chiroti Recipe

Ingredients

For the dough:

2 cups all-purpose flour (maida)

2 tablespoons semolina (rava)

3 tablespoons ghee

A pinch of salt

Water or milk, as required

For the layers:

3 tablespoons ghee

2 tablespoons rice flour or cornflour

For the sugar syrup:

1 cup sugar

½ cup water

½ teaspoon cardamom powder

A few strands of saffron

For frying:

Oil or ghee, as required

Method

In a large bowl, combine maida, semolina, salt, and ghee.

Add water or milk gradually and knead into a firm, smooth dough.

Cover the dough and let it rest for about 20 minutes.

Mix ghee and rice flour or cornflour to make a smooth paste for layering.

Divide the dough into equal-sized balls.

Roll each ball into a very thin round sheet.

Spread a thin layer of the ghee-flour mixture over one sheet and place another sheet on top.

Repeat the process to create 3–4 layers.

Roll the layered sheets tightly into a cylinder and cut them into small pieces.

Gently flatten and roll each piece without pressing too hard, so the layers remain visible.

Heat oil or ghee in a deep pan and fry the Chiroti over medium heat until golden and crisp.

For the syrup, boil sugar and water until you get a light one-string consistency.

Add cardamom powder and saffron to the syrup.

Dip the fried Chiroti briefly into the warm syrup and remove.

Allow them to cool before serving. You can also sprinkle powdered sugar and garnish with chopped almonds or pistachios.

Tips for Perfect Chiroti

Keep the dough firm rather than very soft.

Roll the sheets as thin as possible.

Apply the ghee-flour mixture evenly between the layers.

Fry Chiroti on medium heat for an even, crispy texture.

Do not overcook the sugar syrup, as a very thick syrup can make the Chiroti hard.

Let the Chiroti cool completely before storing it in an airtight container.

Serving Suggestions

Chiroti tastes delicious on its own and can be served with warm milk, rabdi, or a scoop of vanilla ice cream. It is also a wonderful addition to festive meals and special celebrations.
