Imarti is a famous traditional Indian sweet known for its eye-catching spiral or flower-like shape and bright orange color. It is especially popular in North India and is often served during festivals, weddings, and celebrations. Made mainly from urad dal (black gram), Imarti is deep-fried in ghee and soaked in sugar syrup, giving it a perfect balance of crispness and juicy sweetness.

What makes Imarti special is its texture—crispy on the outside, soft and syrupy inside. It is often served warm with rabri, making it even more delicious. This sweet has been a part of Indian culinary heritage for generations and continues to be loved for its rich taste and beautiful appearance.

Imarti Recipe (Step-by-Step)

Ingredients:

1 cup urad dal (soaked for 4–5 hours)

2 cups sugar

1 cup water

1/4 tsp cardamom powder

A few strands of saffron (optional)

Orange food color (optional)

Ghee or oil for deep frying

Preparation:

Prepare Batter:

Drain soaked urad dal and grind it into a smooth, thick paste with very little water. The batter should be fluffy and fine.

Fermentation:

Let the batter rest for 3–4 hours for slight fermentation. This helps make Imarti soft inside.

Sugar Syrup:

Boil sugar and water together until it reaches a one-string consistency. Add cardamom powder and saffron.

Shape Imarti:

Fill the batter into a piping bag or cloth with a small hole. Pipe spiral or flower shapes directly into hot ghee.

Frying:

Deep fry on low-medium heat until golden and crisp.

Soaking:

Immediately dip fried Imartis into warm sugar syrup for 2–3 minutes.

Serve:

Serve hot or warm, optionally with rabri.
