Makhana Barfi is a delicious Indian sweet prepared with makhana (fox nuts), milk, milk powder, sugar, ghee and dry fruits. With its creamy texture and mildly nutty flavour, this homemade barfi is perfect for festivals, family celebrations and special occasions.

Ingredients

2 cups makhana (fox nuts)

1 cup milk

½ cup milk powder

½ cup powdered sugar

2 tablespoons ghee

¼ teaspoon cardamom powder

2 tablespoons chopped almonds

2 tablespoons chopped pistachios

A few saffron strands

1 teaspoon rose water, optional

How to Make Makhana Barfi

Step 1: Roast the Makhana

Heat 1 tablespoon of ghee in a heavy-bottomed pan. Add the makhana and roast on low to medium heat for 5–7 minutes until they become crisp. Let them cool.

Step 2: Grind the Makhana

Transfer the roasted makhana to a blender and grind it into a fine powder. You can keep it slightly coarse if you prefer some texture in the barfi.

Step 3: Cook the Mixture

Heat the remaining ghee in the pan. Add the makhana powder and roast for 2–3 minutes. Pour in the milk and add the milk powder. Stir continuously until the mixture becomes smooth.

Step 4: Add Sugar and Flavourings

Add powdered sugar, cardamom powder and saffron strands. Cook on low heat while stirring continuously. Continue until the mixture becomes thick and starts leaving the sides of the pan.

Step 5: Set the Barfi

Grease a tray or plate with a little ghee. Transfer the mixture to it and spread evenly. Sprinkle chopped almonds and pistachios on top and gently press them into the mixture.

Step 6: Cut and Serve

Allow the barfi to cool completely for about 1–2 hours. Once it becomes firm, cut it into squares or diamond shapes and serve.

Tips for Perfect Makhana Barfi

Roast the makhana well to enhance its flavour.

Cook the mixture on low heat to prevent burning.

Stir continuously after adding milk.

Do not overcook the mixture, as the barfi can become too hard.

Add cashews or walnuts for additional crunch.

For a richer flavour, garnish with extra saffron and pistachios.

How to Store Makhana Barfi

Store the barfi in an airtight container and refrigerate it. It can generally be enjoyed for several days when properly refrigerated. Allow it to come closer to room temperature before serving for a softer texture.
