Malai Kulfi is a classic Indian frozen dessert loved for its rich, creamy texture and irresistible milky flavour. Made with full-fat milk, condensed milk, cream, nuts and cardamom, this homemade kulfi is perfect for summer, festivals and family gatherings.

Ingredients

1 litre full-fat milk

½ cup condensed milk

¼ cup fresh cream

4–5 tablespoons sugar

½ teaspoon cardamom powder

2 tablespoons finely chopped pistachios

2 tablespoons chopped almonds

1 tablespoon chopped cashews

8–10 saffron strands

1 tablespoon milk powder, optional

How to Make Malai Kulfi

Boil the Milk

Pour full-fat milk into a heavy-bottomed pan and bring it to a boil over medium heat.

Reduce the Milk

Lower the flame and simmer the milk, stirring occasionally to prevent it from sticking to the bottom. Continue cooking until the milk reduces and becomes thick and creamy.

Add Condensed Milk and Sugar

Add condensed milk and sugar to the reduced milk. Mix well and cook for another 5–7 minutes.

Add Cream and Flavours

Add fresh cream, cardamom powder and saffron strands. Mix everything well and cook for 2–3 minutes.

Add Dry Fruits

Add chopped pistachios, almonds and cashews. Mix well and turn off the heat.

Cool the Mixture

Allow the kulfi mixture to cool completely at room temperature.

Freeze the Kulfi

Pour the mixture into kulfi moulds or small cups. Cover and freeze for at least 6–8 hours, preferably overnight.

Serve

To remove the kulfi easily, dip the mould in warm water for a few seconds and gently pull out the kulfi. Garnish with chopped pistachios, almonds and saffron.

Tips for Perfect Malai Kulfi

Use full-fat milk for the richest texture.

Stir the milk regularly while reducing it to prevent burning.

Do not freeze the mixture while it is still hot.

Freeze the kulfi overnight for the best results.

Add extra pistachios and almonds for a delicious nutty flavour.

You can add a little khoya or milk powder for an even richer kulfi.

Serving Suggestions

Serve Malai Kulfi chilled with chopped pistachios, almonds and saffron. It can also be served with rose syrup, rabri or fresh seasonal fruits for a special dessert.
