Milk Cake is one of India's most loved traditional sweets, known for its rich, caramelized flavor and soft, grainy texture. Made from full-fat milk, sugar, and a touch of lemon juice or alum to create its signature texture, this delicious dessert is especially popular during festivals such as Diwali, Holi, Raksha Bandhan, and weddings.

Unlike regular barfi, Milk Cake has a naturally golden-brown center created by slow cooking and careful setting. Its melt-in-the-mouth texture and authentic taste make it a favorite among sweet lovers of all ages. Whether served after meals, gifted during celebrations, or enjoyed with a cup of tea, Milk Cake never fails to impress.

Ingredients

2 liters full-fat milk

1 cup sugar

2 tablespoons lemon juice (mixed with 2 tablespoons water)

2 tablespoons ghee

¼ teaspoon cardamom powder

Chopped pistachios and almonds for garnish (optional)

Method

Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat.

Reduce the heat and simmer while stirring continuously until the milk reduces to about one-third of its original quantity.

Add the diluted lemon juice gradually while stirring to create a light grainy texture. Do not let the milk curdle completely.

Continue cooking until the mixture thickens and begins leaving the sides of the pan.

Add sugar and mix well. Cook until the mixture becomes thick and starts changing to a light caramel color.

Stir in the ghee and cardamom powder.

Grease a tray or tin with ghee and transfer the mixture immediately.

Cover the tray for 2–3 hours to allow the characteristic darker center to develop.

Once completely cool, cut into square or diamond-shaped pieces.

Garnish with chopped nuts and serve.

Tips for Perfect Milk Cake

Always use full-fat milk for the richest flavor.

Stir continuously to prevent burning.

Cook on medium to low heat for the best caramelization.

Avoid adding too much lemon juice, as excessive curdling will affect the texture.

Store in an airtight container in the refrigerator for up to one week.

Serving Suggestions

Milk Cake tastes wonderful on its own or paired with masala chai, saffron milk, or coffee. It also makes an excellent festive gift when packed in decorative sweet boxes.
