Pista Rasgulla is a delicious twist on the traditional Bengali rasgulla. Soft, spongy chhena balls are cooked in light sugar syrup and flavoured with pistachios, cardamom and saffron. The beautiful green pistachio flavour makes this dessert perfect for festivals, celebrations and special occasions.

Ingredients

For Rasgulla:

1 litre full-fat milk

2 tbsp lemon juice

1–2 tbsp water

2 tbsp finely powdered pistachios

1 tsp cardamom powder

1 tbsp semolina (optional)

For Sugar Syrup:

1½ cups sugar

4 cups water

1 tsp cardamom powder

1 tbsp chopped pistachios

A few saffron strands

Method

Prepare the chhena: Boil the milk and switch off the flame. Mix lemon juice with a little water and gradually add it to the milk until it curdles.

Strain the curdled milk through a muslin cloth and rinse the chhena with clean water to remove the lemon flavour.

Hang the chhena for about 30 minutes to remove excess water. It should remain soft and slightly moist.

Transfer the chhena to a plate and knead it for 8–10 minutes until smooth.

Add powdered pistachios, cardamom powder and semolina if using. Mix well.

Divide the mixture into small portions and roll them into smooth, crack-free balls.

Prepare the syrup: Add sugar and water to a large pan and bring it to a rolling boil.

Gently place the rasgulla balls into the boiling syrup. Cover and cook for about 15–18 minutes on medium heat.

Add saffron and chopped pistachios during the final few minutes.

Let the rasgullas cool slightly and serve chilled or at room temperature.

Tips for Soft Pista Rasgulla

Use full-fat milk for soft and rich chhena.

Do not over-drain the chhena; it should retain some moisture.

Knead until the mixture becomes smooth and creamy.

Make sure the balls have no cracks, otherwise they may break while cooking.

Use a wide pan so the rasgullas have enough space to expand.

Serving Suggestion

Serve Pista Rasgulla chilled in a bowl of saffron-cardamom syrup and garnish with finely chopped pistachios and a few saffron strands. It makes a beautiful festive dessert for Diwali, Eid, weddings and family celebrations.
