For Rabri

1.5 liters full-fat milk

4 tablespoons sugar

¼ teaspoon cardamom powder

A few saffron strands

2 tablespoons chopped almonds

2 tablespoons chopped pistachios

For Seviyan

1 cup roasted vermicelli (seviyan)

1 tablespoon ghee

1½ cups milk

2 tablespoons sugar (adjust to taste)

Garnishing

Chopped almonds

Chopped pistachios

Rose petals (optional)

Silver leaf (optional)

Method

Step 1: Prepare the Rabri

Heat full-fat milk in a heavy-bottomed pan.

Simmer on low heat, stirring occasionally.

Collect the cream from the sides and mix it back into the milk.

Continue until the milk reduces to nearly one-third.

Add sugar, saffron, cardamom powder, almonds, and pistachios.

Cook for another 5 minutes and set aside.

Step 2: Cook the Seviyan

Heat ghee in another pan.

Lightly roast the vermicelli if using plain seviyan.

Add milk and cook until the vermicelli becomes soft.

Stir in sugar and cook for another 2–3 minutes.

Step 3: Combine

Mix the prepared rabri with the cooked seviyan.

Simmer for 5 minutes so the flavors blend beautifully.

Garnish with almonds, pistachios, saffron, and rose petals.
